Ballyfin is a 5 Star luxury country house hotel in the heart of Ireland at the foot of the Slieve Bloom Mountains.

Ballyfin Demesne is only one of two properties in Ireland who have been awarded Three Michelin Keys. In 2024, our Executive Head Chef Richard Picard-Edwards was successful in gaining Ballyfin's first Michelin Star which we have proudly retained in 2025/2026.  


This is an exciting opportunity for a passionate individual to join our Michelin star Restuarant as Sommelier. 

 

Reporting to the Restuarant Manager, this is an important and valued role within our F&B team which is responsible for overseeing the service of wine & liquor in conjunction with the F&B Manager.

 

Duties Include (but are not limited to:)

  • Maintain and develop the wine cellar
  • To have excellent knowledge of wine, cocktails recipes, spirits and cocktail making
  • Ensure appropriate glasses are used for different types of wine
  • Ensure wine is served at the right temperature.
  • Responsible for ensuring wine and bar orders are placed every week and stock levels are maintained, using the PO system at all times.
  • To ensure the wine list reflects the standards set up after the opening and Wine Geese are represented.
  • Delivery of both wine & whiskey tastings to guests and ensure the experience is of the highest standards.
  • To keep up to date with menus in order to provide best options in terms of wine pairing
  • Understand the service needs, standards of service and working practices involved in working functions and weddings which may involve different shift patterns.
  • Assist in the preparation and setting of food and beverage areas
  • Be aware of security and ensure the bar and cellar and all stock is kept secure at all times
  • To ensure full handover is given to the Restaurant Manager /F&B Manager before your days off to avoid any confusion for guests

  • WSET Level 2 at a minimum
  • Excellent knowledge of wine, cocktails & beverages
  • Excellent communication skills
  • Passion for exceptional customer service & offering the guest experience
  • Team player
